This is a meal that requires very little time to prepare. It is very healthy, and can be eaten a
few times a week especially for those looking for low calorie food recipes, and trying to
lose weight. The beauty of this recipe is the flexibility to substitute the tofu for chicken,
fish, beef, scrambled eggs and much more.
The taco wraps in this recipe are made from the jicama plant. Jicama contains important
vitamins and nutrients like vitamin C, folate, iron, calcium, magnesium among others.
Jicama is an excellent source of fiber which has great health benefits including weight
loss. Depending on your preference, lettuce, cauliflower or egg whites wraps can be used
instead.

Ingredients: –
2 tbsp olive oil
1 bunch chopped green onions
2 grated garlic cloves
2 chopped small tomatoes
2 chopped coriander stems
½ block firm tofu
Spices (Turmeric, black pepper, oregano, cayenne pepper/chili powder)
Toppings: –
Sliced avocado
Red onions
Tomatoes
Coriander
Pomegranate seeds
Steps: –
1. Place green onions in oiled skillet on medium heat and cook for 1-2 minutes, add garlic and stir for about a minute. Add tomatoes and cook for about two minutes.
2.Use a tofu press or fork to scramble the tofu and add it in the skillet. Cook and stir for
about 5 minutes depending on desired consistency and doneness.
3.Add coriander, the spices listed above and salt and cook for about two more minutes.
4. Ready to serve.
